The 2008 IMS Lecture for Meat Science and Technology was delivered on 2008 Overseas Conference of Meat Science and Technology (ICoMST) in Cape Town by Dr. Nicola Simmons of Carne Technologies Ltd., New Zealand. The topic of the lecture had been “Reassessing the Principles of electric Stimulation”.

The systems wherein electric stimulation (ES) of carcasses may be used to modulate beef high quality tend to be evaluated. Evidence to aid a result of ES on pain (along with other beef high quality qualities) based exclusively on changes in the pH/temperature profile within carcass muscle tissue tend to be presented.
